Here in Kentucky it is has just started to cool off. While it has not dropped to solid coat weather yet, we are looking forward to kicking up the use of our Crockpots. There is nothing like coming home on a cool day to the smell of a delicious meal filing your home. These 3 recipes are easy and will fill your home and heart with warmth. I have fond memories of coming home, after a long blustery day and enjoying even just holding the warm bowl and letting its scent fill my nose. As an adult, I love the ease that Crockpots provide along with that sweet aroma.
Ham & Cheese with Potatoes
4 medium Potatoes (russet, Yukon, red), sliced
1 C. Broadbent Ham Sliced into bite size chunks
2 tsp Garlic Powder
3/4 c. Shredded Cheddar Cheese
4 Slices Muenster Cheese
½ C. flour
1 c. heavy whipping cream
In a large bowl, add potatoes, flour and garlic tossing until coated evenly. Layer half the potatoes into your crockpot, the next layer will be half the ham and cheese, repeat again potatoes-ham-cheese layers until you run out of ingredients. Pour the heavy whipping cream on top and cook for 4.5 hours on low heat.
Crockpot Corn Chowder
2 cups potatoes, peeled and cubed
2 cups fresh or frozen corn
1 (16 oz) can creamed corn
6 slices of broadbent’s thick cut bacon crumbled, or end pieces
1 tablespoon sugar
1 teaspoon Worcestershire sauce
1 teaspoon seasoned salt
¼ teaspoon pepper
1 cup half and half (can substitute cream or chicken broth, if desired)
additional crumbled bacon for topping, if desired
Combine the potatoes, corn, creamed corn, bacon, sugar, Worcestershire sauce, seasoned salt and pepper in a slow cooker and cook on high for 3-4 hours. Add in the half and half and cook an additional 15-20 minutes, until heated through. Serve topped with additional bacon, if desired.
Crockpot Split Pea Soup
1 lb. dry split peas
2 cups of Broadbent’s Ham, diced
1 large yellow onion, diced
1 cup celery, chopped
2 cups carrots, chopped
3 cloves of garlic, minced
2 bay leaves
32 oz. of chicken broth
2 cups water
Place all ingredients into a 6-quart crockpot. Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours.
We absolutely adore these classic comfort foods. Plus, we love to add corn bread on the side.
