Baked Ham Bites:
In a bowl mix together 2 cups of mashed potatoes, 2 cups of finely chopped pre-cooked country ham, 1 cup of Swiss cheese, ½ cup of mayo and 1 well-beaten egg.
Also mix in 1 teaspoon of your favorite kind of mustard as well as salt and pepper to taste.
Chill the mixture for 30 minutes then shape into 1-inch balls
Crush 4 cups of cornflakes and roll each ball in the flakes
Place them on a greased baking pan and bake for 25-30 minutes at 350 degrees Fahrenheit
Ham & Cheese Dip:
Combine 2 packages of cream cheese, 2 cups shredded cheddar cheese, 8 ounces of sour cream and 1 cup chopped, pre-cooked country ham
Mix well in baking dish and bake for 30 minutes at 350 degrees Fahrenheit
Serve warm with pretzels, tortilla chips or pita
